Steve Hillier makes a butter tart for everybody.
From butter tarts for diabetics to raspberry butter tarts, he has sold 967 different flavours of the classic pastry.
Hillier, who owns Canada Comfort Foods, is an engineer by training.
"I'm an engineer that bakes," said Hillier, a vendor at the London Farmers Market.
"I love it here," he said. "You can eat fresh food made by local people."
Even Hillier does his shopping at the market, buying the fruit and nuts for his tarts from his fellow vendors.
"Support the people who are supporting you," he said.
On a busy Saturday, Hiller sells up to 250 butter tarts.
"This market is constantly growing."
